Croquettes are a delicious dish that is very typical of Spain. They are made from a dough that can have different shapes but is usually round or oval.
The truth is that the ingredients can be very varied, although classic croquettes are usually made with fish, ham, and vegetables. More and more chefs are looking for ways to surprise with unexpected flavours by making croquettes with stew, seaweed, or chocolate, for example. The result is always a taste explosion… So, there’s no doubt about it: it’s the star dish that no one can resist!
Some historians claim that the Romans already ate something like croquettes. However, the first record in a recipe book dates to 1691 from France. They were called “croquets” and at that time did not contain béchamel sauce in their preparation. They were small balls of meat, egg, herbs and truffle mixed into a batter and fried.
This French croquette had a much firmer consistency than the one we are used to eating today. The fact is that each region adapted this dish in its own way and added its own culinary customs. That is why there are so many different versions.
The first recipe for croquettes in Spain was published in 1839: it was a sweet preparation with rice and milk. Over time, the preparation of croquettes was improved. The béchamel sauce and other ingredients were added to adapt them to everyone’s taste.
Nowadays, it is one of the most popular dishes among Spaniards. No matter where you are in Spain, you are likely to find croquettes served in every restaurant and everyone orders them as a snack. Some people even use the croquettes as an evaluation criterion for the restaurant. The motto is: “If the croquettes are good, the other dishes on the menu have to be good as well”.
