How to prepare an exquisite Arroz caldoso?
Arroz caldoso (“brothy rice”) is a very versatile dish, as it can be prepared with just vegetables or with some kind of animal protein. It is a very easy meal to prepare, although achieving the particular texture and flavour of this recipe requires some skill and knowledge about how to choose the right ingredients.
Choosing the right type of rice
Whether you are thinking of preparing Arroz caldoso with chicken or with vegetables, the type of rice should be round grain, as it has more starch so that a denser texture can be achieved. It also absorbs more broth and does not break down even if it is cooked for a long time. Remember to use a large but shallow container such as a paella pan or shallow casserole dish.
A good sofrito
The sofrito (a thick savory paste often used in Mediterranean cuisine) is the base of the rice, it must be made so that the ingredients such as meat and vegetables do not absorb too much broth. It also brings out the flavours and helps to enliven the colour. Depending on the quantity, the cooking time can vary between 15 and 20 minutes over low heat, plus about 5 minutes of rest before eating.
